Place 2 Tbsp. butter in a large ovenproof skillet and set over medium-high heat. When butter is melted, set the apple wedges in the skillet, cut side down, and cook 3 minutes. Turn each apple wedge over and then remove skillet from the heat. Measure 2 Tbsp. of brown sugar and sprinkle some of it on each apple wedge. Tear a few fresh sage leaves in half and set them around the apples. Set skillet in the oven and roast apples 10 minutes, or until just tender.
