Three Ways to Use Deli Barbecue Chicken
If you've bought a barbecued-flavoured chicken from our deli and did not eat it all, or bought one and want to create another dish with it, here are three simple ideas.
- Summer Chicken Wraps
Pull the chicken meat off the bones and chop. Roll and seal the meat inside mayonnaise-spread tortillas with strips of cucumber and bell pepper, grated carrots, dried cherries or cranberries, and baby salad greens.
- Barbecue Chicken Caesar Salad
Toss chopped romaine lettuce and croutons with homemade or store-bought Caesar dressing. Divide and set the salad on plates. Pull the chicken meat off the bones. Slice and set the meat on the salads. Sprinkle with Parmesan cheese and enjoy.
- Pulled Chicken Sandwiches
Pull the chicken meat into shreds and set in a pot. Add barbecue sauce to taste and some water or beer to loosen the mixture. Set on the stove and bring to simmer. Stuff the saucy chicken into buns with sliced raw onion and pickles.
