Place the shrimp, carrot, green onion, mayonnaise, curry powder, salt and lime juice in a bowl and mix to combine. Place an equal amount of the mixture in a row in the centre of each tortilla. Divide and top the shrimp with the grapes, almonds and salad greens. Fold the sides of each tortilla partially over the filling and then roll into a tight cylinder. Wrap each in plastic wrap and refrigerate until ready to serve (can be made a few hours in advance of serving). When ready to serve, cut each in half widthwise and enjoy.
Recipe Options: Instead of shrimp, make these wraps with one cup of leftover, cooked chicken, cut into small cubes. Rather than almonds, use unsalted roast cashews. Try baby spinach as a substitute for salad greens.
